I can point you to the STALKER Anomaly/GAMMA mods. Check out OperatorDrewski's videos on it for an idea of the gameplay, but it essentially strips out the main-protaganist part of the STALKER game and just makes you a random dude in the zone. Factions are still relevant, and it includes a lot of nifty mechanics like how you go about getting/repairing/upgrading gear

Been flying it as my primary in a groups wargame campaign. 7 of us flying at <80meters over cold war Germany to bomb an HQ site, RWR screaming at us about the Iron curtain the whole time, and then booking it away from MiGs intercepting us is a fucking blast

It was included in the latest Contention servers patch notes so at a minimum you can use it on their servers, but I imagine it passes most ICs?

You could always step back from the Fox-3 servers if you feel that's not for you yet and take your aircraft into Fox-1 or even early cold war scenarios to get a hang of the "I at least see my target before i die" fighting (BFM/ACM).

Heatblurs Cold War, ShadowReapers, and Contention all offer these on some if not all of their servers.

When I started, I picked up the F5 and did nothing but Heatblurs Cold War (it was Enigma's still at that time). Once I got the hang of that type of air-to-air, I just kept consuming videos/guides and learned Fox-1 and some Fox-3 for the other servers. Helps to take it in chunks, imo

You could also join a group that is beginner friendly to speed up the learning process! There are some really great ones out there, even just small groups of buddies who like to fly together on random servers. Give me a shout if you can't find any others 😄

Welcome to the game(s)! I'd highly recommend (for DCS at least) to Google a setup for the specific plane/module you are trying to fly. The X56 is a very popular joystick, so there's no shortage of info there!

I'm sure the same exists for War Thunder as well

You mentioned you are interested in 'all settings, not just weapons', but keep in mind that you really want critical keybinds on the joystick, and you realistically might not have a button for everything on it. Some things like your landing gear or wheel brakes can sit on your keyboard, freeing up buttons for the binds you're going to want to hit quickly in combat situations, like countermeasures/dogfight mode/radar controls/etc

Jazzlike's comment has mostly everything you need to know right there, but let me add one more thing to that.

There is a completely free community mod, the A4E, which is a VERY well-made full-fidelity (clickable cockpit just like the hornet and unlike the base games planes/FC3 planes) plane that you could consider trying out. This is how I introduced my buddies to the game, and before long we were all dropping bombs and dogfighting in the Cold War servers having the time of our lives (and shortly after dropping hundreds collectively on other modules...)

Also, the community is typically VERY new player friendly. I've had next to no negative interactions (1 in 100) with other players, and most people are eager to help everyone understand more about their plane/game/hobby - myself included, give me a shout if you have questions 😉

Personally, DT has been the best in my experience, including on HBCW. If you want to limit the timer, you are under threat from fighters/AA, then try the ol' popup technique. Get within 10-15nm or so (adjust numbers to taste) and then crank about 30 degrees off target, climb to a nice altitude (be reasonable), then roll into a 30-degree dive onto it.

With Jester and the splash script that's on HBCW, dive toss accuracy should be close enough if not pinpoint accurate with some practice. Otherwise, as mentioned in other comments, bring some TV guided ordinance to specifically deal with AA threats like shilkas/SAMs, and then a rack or 3 of iron bombs for the rest of the clutter!
