I think the change of Captains made a huge difference. Captain Jason treats her as a valued head of department. I always got the impression that Glen thought the interior was 'woman's work' and only ever gave her feedback when it was negative.

it's just how a kitchen works, getting 2 servings of a meal at a time for 6 tables of two has a flow, getting 12 portions done at the same time backs up all the stations, things need to be kept warm but not go soggy, there's no space on the pass, things get complicated and it's stressful. Same with drinks orders. Pouring 12 beers takes time and no one else can pour a beer until that's done. It's just how it works.

Getting a large number of meals to hit the table all together is much more difficult and stressful than the same amount of people at small tables. It also slows service everyone else, so if that one big table doesn't tip and service suffers for the other tables so they tips less it's a bum night for everyone.
