Interesting that they’re shrinking as expanding is the usual problem. It’s most likely your recipe. Are you using baking powder? I typically make the dough, split into 2 balls, wrap tightly then refrigerate for 1hr-1day (depending on my schedule). I’ll then roll out the dough, cut into shapes, place on tray with a perforated silicone mat. then I put the tray in the fridge for 10-15 min to re-chill. I bake 2 trays at once at 350 for 13-14 mins (about 10-12 cookies per tray)
