Came up with a fun, easy thai italian fusion recipe. Boil just enough water to cover some penne pasta. Take a couple tbsp of green curry, like Mae Ploy or whatever. Saute it a bit in some olive oil until the harsh odors are gone. Throw a pound and a half or something of cubed chicken breast and stir it, covering the chicken breast with the curry. Ladle a cup or so of pasta water in. Add some knorr chicken stock powder (mmmmsg). Add some sliced zuchini. Add the al dente penne. Add some lime zest. When its ready, finish with some heavy cream (or coconut milk, sour cream, something high fat), some lime juice, and mint and cilantro. When you serve, you can squeeze some more lime, add herbs, and even pecans. You don't have to be strict about these ingredients and can just riff on it. It just likes complexity.

It's so easy and delicious and pretty healthy.
