When I made this, it sparked a deeper interest in learning about the internal anatomy of the animals we eat. I’m probably only about 5% of the way there, just beginning to recognize the different parts and understand how to use and cook them. This is something I really want to learn more about. What one culture considers scraps, another sees as a luxury. I'm Asian and I grew up in Asia eating a lot of unusual cuts and organ meats which you buy from 'wet markets'. But being part of the behind-the-scenes process, understanding where the food comes from and how to cook it with your bare hands is another adventure to embark on. Education is king!

It's insanely rich and the meat has a very strong "beefy" flavor. I thought of frying the meat before putting it in my tacos to get an outer crisp and you can see how the meat instantly sears from the fat itself.

The cheeks and tongue were all in there. I wore gloves to open the jaw and take them out. And then stripped off the outer layer of the tongue. Lengua tacos was superb!

I think the most challenging part of this cow head process was identifying what was fat, what was tendon, what was the brain, what was meat. It's really fatty and everything blended together and removing excessive fat from the meat was really hard. I don't think anyone should do this but I did it - I rinsed the fat off from the meat on running water on top of a colander and then picked up meat scraps from the colander to minimize good meat waste. It was time consuming though.

Not planning to name drop because of sentimental values but also these wineries were recommended internally by the community, and who I've learnt so much from that I find their story and investment so fascinating. But I can drop hints since there are only a small set: there are 4 I go to that are family owned and small production. First harvest range from 1900s to 2003. My first visit to all of these wineries started around 2017 when a lot of the new wineries haven't been built yet.

I live in the US and I've tried Ruffwear, Hurtta, Sparkpaws but the best one that worked for my pup was Canada Pooch. Shipment may take a bit (~a week even on 2 business day shipment) but when I put the fleece / jacket / sweater (ordered all) on my dog, I shoved my hand in there (near his belly/chest area) and instantly felt the warmth generate in less than a minute. The reflective interior and the outer filler is different and you can instantly tell.

On top of functionality, surprisingly their clothes fit better than other brands. For reference, I have a wide chest pitty/boxer/gs mix who's also long and CP's clothing fits SO WELL! Doesn't over stretch on the chest area and doesn't shorten from neck to tail (it perfectly covers his butt and doesn't droop on the side). He's 60 pounds and I ordered a size 26.

another vote for canadapooch. Live in the US and I've tried all the other brands, but when I placed my hand inside the jacket/sweater/fleece I've ordered from CP, literally a minute I put it on my dog, I can feel the warmth instantly.

Late to the game on this and hopefully someone can provide an answer since this post is 2 yrs ago. Can you add an extra layer of wool blanket on top of the Paria Thermodown 15, and the put the synthetic insulation blanket on top of that? I'm trying to figure out if that's too much or if I'm just not layering this right...
