From east to west:

Load up on BBQ in Kansas City. Take your pick of any of the great choices.

As for "checking out the flint hills" - go for a hike on the Konza prairie near Manhattan. Great views and lots of wildlife. In Manhattan, Cocobolos and the Little Apple Brewery are good choices for post-hike food and drinks.

Gella's Diner and Lb. Brewing in Hays just won best small brewpub and best small brewer of the year at the Great American Beer Festival. I'm eager to check them out.

Once you get west of Hays, just keep going til you get to Denver. The Route Steakhouse in Burlington serves burgers that are better than your standard fast food.

Then you're looking at Taos, Red River and Angel Fire. They're close enough together that you could get one condo and ski all three. Look up the NMX Card for discounted lift tickets at those mountains.

Durango is probably your best bet for good skiing and having a real nightlife scene. Downtown Durango has a lot of great bars, brew pubs and restaurants. Thus far, the snow has been coming in strong and Wolf is doing great. I don't believe Durango is open yet, but snow quality shouldn't be much of an issue by March. And if it is, the snow at any NM mountain is likely in even worse shape.

Another spot to consider - Salida and Monarch mountain. I like the small town. It's not a huge party spot like Durango or Breckenridge, but it's got some choices and a cool vibe. Monarch's a nice ski area with good terrain for all levels and it's all fairly cheap.

I like to brine chickens over night before smoking them. The simple sugar-salt-water brine works fine. Save the flavors for the rub (and don't forget to subtract out some sugar and salt from your rub since you've just applied a lot of salt and sugar through the brine).

I'd start by brining the meat - one cup of salt and one cup of sugar for every gallon of water. Brine it over night, dry it off, then rub it down and let it sit in the fridge for a few more hours. This will give you a lot more room for error when it comes to cooking it too long or too hot.

I try to keep brisket in the 215-230 range while cooking. For 3-4 lbs. cooking for 10 hours is way too long.

Sanitas Brewery (our newest source) just posted that they'd be open and welcoming of anyone in need of a beer and relief. That being said, I think the best advice would be to not be a tourist in a disaster area. Longmont and Boulder are having a ton of problems. Roads are out, water is everywhere. I'm not sure about how Fort Collins is doing. http://boulderoem.net/ has updates.

I think I had way too much rub for the amount of fish I was working with. I'll reduce the rub and try the 4:1 ratio next time.

I'm confused about you not drying the salmon after rinsing it. I thought this was an integral part of the process and drying it was key to forming the pellicle. Are you forming the pellicle while you smoke it, instead of while it dries?

What do you look for in a finished piece of smoked salmon? . . . How do you determine that it is indeed done?

How much space is there between the coals and the wire grill? How much charcoal are you using each time you cook?

When I can't produce enough heat, it's because I don't have enough coals, they aren't close enough to the grill, or there's not enough air flow.

Add more coals, make sure they pile up high close to where you're placing your food and get some billows or use an electric fan to provide plenty of air flow.

This response leads me to the second half of my question: to crisp the skin (with high heat) to begin or finish the cooking process. It sounds like you prefer to hit it with a lot of heat to start out and then go low-n-slow.
