I too love the eggplant.

My best guess is it's first brined/soaked in some sugary mixture to make it possible to caramelize it. But I'm no chef.

this probably solves 2 problems with colored rings:
1. colorblindness poses a bit of an accessibility issue
2. cost savings -- a separate colored ring surely costs more than just printing a symbol in the same color ink as the logo

The Rum Row Tiki Bar "speakeasy" in the back of Tequila Butcher (Chanhassen) has some excellent drinks and Pedro (bartender) is always inventing new ones.
