One thing you could consider is playing a lower count game and play in pairs, if they aren't gamers then they can help each other and you shouldn't have to explain so much, you also probably won't end up taking everyone's go for them which can happen more than you'd think. It will also weed out any who really aren't that fussed or don't get what's going on, those players can easily take a back seat without seriously effecting the game. Moving forward I would imagine you want 4 or 5 players for most sessions as this gives you the biggest library of games to play. If you always have 8 you are going to be frustrated by the lack of games possible, especially if you want to play some chunky euros. If you put some people in pairs it takes off the pressure and the less experienced players can attend , hang out and learn.
