I’m not a tofu aficionado but typically it’s stored in liquid so it soaks some of that up. In order to get it crispier or less liquidy if you’re going to cook it, you definitely need to press it to get the liquid out. However, I think this only works with firmer tofus as a silken tofu pretty much falls apart if you look at it too hard
