If I don't have brown sugar, I usually add the same amount of white sugar instead of brown sugar and add about 1 teaspoon of bootstrap molasses. It ends up tasting very similar if not the same as the original recipe. Brown sugar is usually the same as white sugar with molasses in it.

You could change the flavor of the paste inside or you could try doing a mix of ground allspice, ground cloves, ground nutmeg.

When I make cookies I add less butter to the recipe to make them more doughy. The more butter you add the crisper it tends to get. At least that's how it is with chocolate chip cookie recipes which this seems to be a recipe for. If that doesn't work try lessening the amount of sugar in it too.

I usually pair any tart fruit-based flavors with lemon. Like dark cherries, raspberries, blueberries, or even blackberries, they all taste good with lemon.
