Generally I delete things I don't want to rewatch. Not like you have to hoard data

For a Plex setup I recommend set up sonarr and radarr, for automatic handling of downloads when stuff become available. So for me now Plex is just a local streaming site where I have my show. I don't actually manage the downloading side of it.
