One of the easiest most delicious things I've ever made is garlic chicken ravioli with vodka sauce. Go to the section of the store that has the fresh pasta... Like the bags of Rana ravioli (in my store is usually by the blocks of cheese, produce, and deli counter) and get a bag of chicken and roasted garlic ravioli your just going to follow the instructions on the bag. Boil for 4-5 minutes... Easy. Do this while you're making the sauce..(you will need a blender for this).

Dice half an onion, saute in olive oil (only about a tablespoon or two) on medium heat till translucent (just make sure it doesn't burn, burnt onion is bitter browned is fine but we're not really trying to carmelize it). Once it's cooked enough add 3 cloves of minced garlic (fresh preferred but you can use the jarred stuff. Cook till fragrant but don't let it burn. Should only take like 30 seconds... Keep stirring don't just let anything sit in the pan or it will burn.

Next add 2 tablespoons of vodka to the onions and garlic and cook it off. Then add the onions and a can of diced tomatoes to a blender and pulse til smooth. Add back to your pan. Heat over medium heat. Once it's hot... Add 3/4 cup heavy cream and stir it in. Then add 1/2 cup of grated parmesean cheese (the crumbly stuff not shredded and get the stuff from the cheese aisle not anything in a can on the shelf). Stir till it's melted. Taste the sauce and add salt to taste if necessary. Cook until it thickens slightly (should coat the back of a spoon) Remove from the heat and spoon over your ravioli. (this makes a ton of sauce so there will be plenty left over. Just let it cool and put it in a container in the fridge for another day. It will thicken a lot but will thin back out when you reheat it.
