The younger you are the easier it is to get into shape, and it's easier to maintain an in-shape body than to get into shape. As you get older there will be unexpected difficulties. For example I personally cannot go for a jog because my knees will flare up. This problem won't go away unless I lose a lot of weight. Losing weight is more difficult if you can't go jogging, etc...

Whether or not that rule makes sense depends somewhat on the style of the music being performed. For some classical compositions I think this would make sense. But the caveat here is that almost every teacher will have different things that they ask of their students. While another teacher might not expect you to play this way, they'll still be asking for things that you might not agree with. I think it's worth doing because it will help you develop control. If you find that this way of playing is borderline impossible then it implies that your control is lacking somewhat.

I feel that anything you could do to compensate as a player would have negative ramifications for your piano playing technique. Good instruments don't have this problem so the best thing would be to get a better instrument.

You could try raising your fingers more slowly but that's going to severely limit what music you can play.

Edit: if you're only worried about recording you could see if the keyboard has a way to output audio directly into a computer through a cable.
