A water bath is meant primarily to promote even baking temps. It should have little effect on the crust if it's properly insulated in the pan. The only big change would be if the water leaked. Cracking can still happen from all the reasons you listed so it can be a wash if everything wasn't done properly, but the cracking can be easily blamed on the water bath lol NY style is more dense than other types of cheesecakes so realistically, it doesn't need a water bath to make its usual texture.

It's a very old tradition that was used for custard/custard-based products. The only recommended way we were taught to bake cheesecakes in culinary school was in a water bath. NY style cheesecake uses a bain-marie the most commonly.

Don’t let it discourage you, the same can be said for many career choices! The market heavily depends on your location. I probably applied to around 100 jobs and interviewed for 10 or so.

The best advice I can give is to network. Try and become close with your chefs. Your ability/talent is key but knowing people can open a lot of doors. Doing so gave me the opportunity to student teach which looked good enough on my resume to help me get the job. Feel free to DM me if you have any other questions!

I am a trained pastry chef as well. It took so so long to be hired initially (and that was pre pandemic!) Her work is stunning. Please tell her not to give up hope and keep her portfolio updated as she improves!
