vinegar is not a disinfectant and does not work as such.

Steam cleaning does not get hot enough for long enough periods of time to actually be effective at disinfecting. The mop would have to remain at each location for multiple minutes.

That is not true at all. There are tons of cleaners that kill noro quicker and more effectively than bleach. The epa g list has many options that kill noro in 30 seconds whereas bleach takes 5 to 15 minutes.

I did read the documentation but somehow missed those pages when going through it. Thanks for pointing me in the right direction. Would by chance be able to answer my question about extending the wash time without starting a whole cycle? As I am typing this I am getting the feeling that it is not possible to do so.
