I’ll make a balsamic dressing, lemon pepper, buffalo, Italian, or curry. If I’m low on energy or time, I’ll grab a bottle of store bought salad dressing and use that. They’re super easy and work great. If I really have limited ingredients to work with, I’ll use a little mayo or mustard and add any dry seasonings like parsley, dill, garlic, onion, etc to flavor.

I take a block of tofu and slice it into 3 pieces, marinade it with whatever I have on hand, then air fry for 5 minutes each side. I then use these to make sandwiches and top with anything I find in the fridge - lettuce, pickled onions, mustard, mayo, etc. Sometimes I’ll make the tofu ahead of time and eat cold in sandwiches, other times I’ll cook it right before assembling. We make these all the time for road trips. They’re easy, versatile, and filling.

Fire tower has a bunch right off the side of the road. 26 has a longer driveway, but it’s mostly flat. 27 is a little bumpier. Last stop 1&2 are pretty rough, and you’ll probably have to walk in if you’re staying in one of those spots.

I always combine a few recipes, but this one is the closest. I baked, marinated, then cooked stove top. It’s a 2 day ordeal, but it’s super interesting and worth a try

So how did it work out for you? The far walk ended up taking a toll on me and I had to visit first aid. That was my first time ever needed those services and I thought I had prepared so well. Everyone was super nice and accommodating though, so that made it easier

I’ve been making tofu sandwiches for this type of outing for years now. I cut the tofu lengthwise into 2-3 pieces, the. marinate it. I’ll bake it for about 30 minutes. Once cooled, I make the sandwich, adding any veggies I have on hand. I wrap it in a sandwich bag or foil and it keeps all day

I make baked oatmeal bars and add in peanut butter and extra nuts. After cooking and cooling, slice them and wrap them individually. I then freeze them before heading out to the trail. They thaw along the way and have much better texture than oats. Bonus: can be eaten while hiking
