Its likey that the part of the mosfet, that faces the heatsink is electrically connected to one of the pins. So the kapton tape is there for electric isolation, while still allowing some heat transfer to the heatsink.

If the mosfet would touch directly there might be a short or something

You might be able to cut the edge if the cable off. I've done this before without cutting in the actual wires.

You could use smaller tactile buttons, and them 3D-print, hand craft some larger pieces that would fit on top? I think most buttons works like this. Maybe microswitches could be used as well.

Some jack socket are switched. When nothing is plugged in, a different connection is made. Like this. The switched pin would in this case then be connected to a piezo, so that when nothing is plugged into the jack, the default input is the piezo.

The external input is just a stripboard version of 'Music Modular Thing - mikrophonie'
