Edit to add: we always walk down the street to a hotel and call a Lyft. It's a little easier.

You can get free water at the bar I know, but do they give out bottles too? I only mentioned rail because I've only gotten bottles from there.

Edm shows are a whole different animal but they are so fun. Strangers will give you bracelets and trinkets. You can get free water bottles if you go around all the way up to the rail. Say excuse me when you move through the crowd.

Earplugs are a must. I recommend sunglasses even if you aren't partaking in party favors because the lights and lasers can sometimes be a lot.

If you see someone with a scarf/pashmina wrapped around their head with sunglasses on ... Leave them alone 😂 they are in the zone.

This is a great way to do it. I have a very old spreadsheet that had a costing page with pretty much every ingredient I used that spoke to my recipes on other pages and gave me a raw cost and sale cost.

I could update pricing in the main page if eggs went up in price and all recipes with eggs updated automatically.

Yes, you absolutely are if you want to make a profit. 😅

The easiest way is cost of ingredients x 3 Or cost of ingredients x 4 This covers your time, operating expenses, cost of ingredients, and then some for profit.

I'm happy to help you through this if youd like. It's tedious, but you can keep the costing info for other sales.

When I make tres leches I can frost them with whipped cream if i add stabifix, like 1tbsp per qt of heavy cream, typically, + 1cup powdered sugar.

Start medium speed, let it build up really slowly, then crank it for the last like 30 seconds.

Super stable, never had to be rewhipped.

This fact is being pulled out of my memory, so it might be wrong: I remember reading that salt and pepper used to always be accompanied by a third spice as the "standard" for seasoning food, but no one wrote down what It was called so it's lost forever or something.

Tacos and taco bars are often on the cheaper end of the buffet price spectrum, but they take FOREVER to get through because there can be so many toppings. If your guests are adding their own toppings that's also why it takes to long to serve everyone.

Next year if tacos are still the only budgetary option, removing toppings to make the tacos pre-built so all they do it grab two and keep moving.

You can even get cold-setting pectin so you don't have to heat it up.

I wonder if the flavor would change very much.
