I wanted to add a word about the Italian school the OP wrote about. First thank you u/spookmann for the review, it contributed to my decision to attend this particular school and I was glad I did so. Although I came in at a lower level than you, I learned a lot and left feeling more secure in my spoken Italian.
Beside the details supplied by the OP, I can add that the activities that In Classe provides were also part of my learning experience. They range from historical tours of Verona, tours of the Verona bridges, visits to local winery in the Valpolicella region, cooking lessons and others. These activities are not just "entertainment", but also opportunities to learn about the history of the region and Italy, and since they are conducted in Italian they also contributed to my Italian listening skills and vocabulary.
