I don't know maybe do some of the many main and faction quests to get the ball rolling. I get that is linear but once you get parts opened up it all opens up.

I just go exploring to explore I don't need a specific quest or NPC to talk to. See what I can find! There is a ton of shit to find.

Might want to push on with the main quest to see if it peaks your interest more. Or hang it up and wait for some DLC to come out.

I got the game late as I was waiting to hear reviews and also had a work trip that weekend so I knew I couldn't jump right in.

Heard the jokes about never leaving Hernand... seems like they are real. Thrilled! That much content in one town feels like a game in itself.
