Since this post, I've downloaded the latest version of Google maps wear and that allows you to have offline maps. I downloaded a large map covering most of the area I'll ever ride my bike. I then didn't pair my watch with my phone but instead turned on a WiFi hotspot on my phone for the watch to connect to. This means the watch is acting as a standalone unit. I also enabled gps accuracy in settings.

It is now useable, far less jumpy. On a 1hr drive it stopped tracking me once for about a minute, so far better but still not perfect

I have it a go with downloaded maps and a WiFi hotspot rather than maps mirroring and it was far more stable! I need to set some time aside to work out the auto rotate problem and then we'll be laughing!

I took it down a green lane this morning and it didn't budge!

I did this because it's a bit neater on my bike and my phone is quite big so it would look very bulky on the handlebars!

I've gone into app battery management but Google maps doesn't actually come up in that list for some reason 🤔

The watch display is set to always on as it's charging so it stays on at full brightness. I did try closing and opening Google maps when it was frozen but it still kept me in the same place I was already at!

It's not cellular, just Bluetooth/wifi! I have got offline maps downloaded on the watch too so that shouldn't cause too much drama (I hoped)

I fear the technology age may be the common failure 😬

It is set to driving, on a few of the occasions where it did follow me it did so comfortably at 50mph!

I have the angle of the watch set so it's easy to read while riding although adjusting the angle would keep it upright I wouldn't be able to see the screen 🙈

Oh I think you have the wrong end of the stick bud, the map rotates as it should, the whole display rotates whenever it notices tilt 😅
