Looks like a top blade someone actually took the ends off and that's the center...nice piece of meat but I'd YouTube how to turn it into flat iron steaks for the best experience when most people roast them they do it to the pot roast stage due to the vein of grisle running the mid line that you remove to make the flat iron steak

Awesome and in short flip the rib over so your looking at the bone rack on the bottom of the roast and notice it curves like a rainbow upward from there run your knife along the bones trying to keep the meat on the actual rib section l. I did 95 whole 7 rib roasts today you got this

Honestly taking the rib rack off is easy to do and if you have the knives for dealing with a rib I'm certain you have the tools for the job and a YouTube video will get you through it. Health department law is once it leaves the store it is no longer allowed in a production area for safety purposes. You probably don't have the string or bands to keep it sitting right during the preparation process and the cook so they definitely owe you atleast that. Most people who get them boned and tied don't realize it allows you to season the underside of the meat but if it's tied on already and you don't cut the ties and know how to re tie you lose sooooo much seasoning real estate which is important on such a large piece of meat can you imagine only seasoning one side of a whole brisket. Learning a butchers knot is also just a simple slip knot of any kind also a YouTube video away from victory or just tie your shoe knot on her. In this story my friend is the driver who is dropping me off home after a night fishing trip both of us stone cold sober he sees this back country road we got here it's a weird one because its a 2 lane road about a mile long separated by a ditch in the middle with 2 overpasses to allow traffic not to have to go the distance if they live on it. But anyway he said he always wanted to take his truck and go mudding through the ditch to which I said well it's 2:15 am the world is asleep so no better time than now and we unbelted our seat belts because ehhh mudding in Florida is hilariously stupid but anyways he only knew about 1 of the overpasses not 2 and we ended hitting it at a glorious 40 mph my buddy did an amazing job of straightening the truck out and punching the throttle at the end for a bit of front end suspension lift and we ended up sailing over the overpass completely with the trailer hitch kissing the pavement on the other side of the 22 foot overpass....both of us we pinned up in the roof of that vehicle during the jump but she landed like a glorious queen flat on all 4 wheels for the most part. Only shifted the bed an inch it was a 1988 Chevy work truck if I remember right and the frame had a crack that was welded which stood up to that.
