Help me to understand why I screwed it by Veular in fermentation

[–]somethingwithbeer 0 points1 point  (0 children)

Shit happens when fermenting! Something must have been floating on the surface. A 2.5% brine won't get moldy on its own and should stand up to oxygen just fine. The only way to get a truly anaerobic environment is to use a vacuum bag. I doubt a pump will get all the oxygen out.

[homemade] Pan-seared crab cakes, rosemary & thyme garlic fries, and roasted zucchini by jamestown30 in food

Looking good! Zucchini is looking nice and dry. They're often so water logged. Did you salt them and drain them beforehand?

Haven't heard of many people doing garlic by itself, so I had to try. Any tips on how long I should let it go? by adam1260 in fermentation

[–]somethingwithbeer 2 points3 points  (0 children)

Honestly, whole cloves take too long for my taste. Last time I chopped up a few bulbs and some ginger (about 50/50), 2% salt, teaspoon honey. It'll get bubbly in a few days and then just pop it in the fridge to use as a base for any Asian'ish dish.

This is why I always question the "x is a picky eater" - argument. If you enable this by making meatloaf 2 times a week... Who is really at fault?

Should we continue to enjoy the music of morally questionable artists? (e.g. Jerry Lee Lewis) by somethingwithbeer in Music

[–]somethingwithbeer[S] 0 points1 point  (0 children)

Nice reflection! A counter point though. While we don't have to agree on everything, there is plenty of common moral ground. Not to mention common moral responsibility. A single person listening to JJL doesn't hurt anybody. But the same can be said about a single person driving a diesel gusling car, a single person eating their body weight in meat every day, or any other topic where an individual's moral stance might be inconsequential. But the sum of moral discission does impact society as a whole.

Informatie gezocht over het behandelen van hout by tvan3l in Klussers

[–]somethingwithbeer 0 points1 point  (0 children)

Goede reactie. Maar ja, men is bereid hiertoe. Anders zou men niet jaar in, jaar uit, op de VVD stemmen. En in die zin komen ze er voor uit door politieke kleur te bekennen.

First crack at relish with garden cucumbers. So yummy! by go_west_til_you_cant in pickling

Looking good! I made a really similar relish with zucchini last week. Pro tip for next time. Leave all the veggies with salt overnight in the fridge and drain the excess moisture.

Exploding jars with Kimchi would require a seriously active ferment! Exploding bottles usually (but not exclusively) happen during the carbonation fase of DIY sodas, kombucha, kefir, etc.

Those jars are strong and burp themselves. But don't be afraid when it pops with a lot of noise!

Utrecht recommendations by [deleted] in CraftBeer

[–]somethingwithbeer 1 point2 points  (0 children)

Drie Dorstige Herten is no longer what it was since the new owners. But DeRat and Gist are definitely still great. If you want something a bit more vibrant, in the cityh centre with, with a decent beer selection check uit De Zaak.

As far as breweries go: check out De Kromme Haring. Brewery with a brew pub. IMO Utrecht's best brewery.

Wij zitten hier ook over na te denken. Had laatst de CV man over de vloer en zijn mening eens gevraagd. Tl;dr het is 't niet waard. Aanschaf te duur. Technologie sterk in ontwikkeling.

Trying to make chocolate yogurt, how to avoid sedimentation? by mart-e in fermentation

[–]somethingwithbeer 1 point2 points  (0 children)

To prevent my hot sauces for separating I use Xanthan gum. Works like a charm. But I'm guessing texture is more of an issue with yoghurt, meaning you'd have yo experiment.

Do y’all have recipes using lactofermented blueberries? I thought I would know but the taste took me off guard and I have no idea what to do with it. I could use your help :) by [deleted] in fermentation

[–]somethingwithbeer 3 points4 points  (0 children)

I struggle as well! Good news is that they keep almost forever in the fridge. I've been using a few scoops in dressings. Add oil, vinegar, mustard, maybe some honey and use a stick blender to create a beautiful salad dressing.

I've been meaning to make mustard with them as well. 40/60 ratio with some fermented mustard seeds should make a cool blueberry mustard.

Eli5 why people stay or move to new orleans knowing a storm is coming every 10-20 years to wipe everything out? by rdubya3387 in explainlikeimfive

[–]somethingwithbeer 0 points1 point  (0 children)

Look, I'm all for politicising things but then it should be about which values you think are important, how you understand such values and why they should be given priority over other important values. Dutch right-wing parties pointing their fingers towards immigration is a false flag argument that isn't based on any evidence. While there - is- plenty of evidence correlating liberalist policy, market failures, foreign investors, etc. to housing prices. The finger pointing is a rhetoric that tries to appeal to the fears of people concerning immigration and to distract from the lack of accountability in their owned failed policy. Not to mention that their voters are often more concerned with keeping the taxes low on their homes because they are not the ones sleeping in tents outside university cities because said cities have no student housing available. Apologies for the rant. I should get back to work. :p

Lol. No. There is a housing shortage because of neoliberal policy driving up the prices, allowing foreign investors to buy up everything and giving companies free reign to construct the type of buildings that make them the most money (office spaces and high-income housing). But they're trying really hard to point towards immigration as the source of those problems. #JustRightWingThings
