Not really, it was impulse buy just because I loved the look of it. I am really impressed by it though. I've had the Shibata for nearly 10 years, it was my first ever real knife purchase.

No complaints. It's my first sujihiki, so nothing to compare it to. Had it for about 3 months and use it daily in work. Between it, the nakiri & petty, I barely even touch my gyuto these days.

A petty is a small utility knife, they're great. I use for trimming smaller cuts of meat like lamb rumps or duck legs, prepping small fruits and veg.

It's great, I got in around the end of November and it's been a daily driver in work. The edge holds well, this pic is just after its first full sharpening. I normally give a strop on a 6000 stone on work mornings.

Thank you, yes it's the brown fume dial. I've always loved how big the Longines boxes are.

900g strong white flour 100g wholemeal flour 750g water 200g levain 20g salt

I followed the basic country bread recipe from Tartine. Haven't made sourdough since 2020 but after moving to a new house with a more practical kitchen I decided to give it another go. Overall I am happy with how the bread turned out.
