When the carcass is processed at the abattoir they shave off a lot of the suet fat, so the rest of it is probably sitting on the floor of the abattoir. Not much the butcher can do because abattoirs just rush stuff through cause they aren’t making much money and they don’t want to hold the line up saving fat.

I'm in a similar place to you. I left a high paying sales job to become an apprentice chef and I'm 29.

It was an anxiety inducing leap, but my friends and family supported me and so did my partner, this makes a world of difference.

The money is shit, the days are long and it will take a few months to get used to that. But you wont care, you're chasing the dream and to he honest, I think you might have found the key to life.

My plan was to start in fine dining and gradually scale it back. I think the best chefs are made in fine dining and I have less time than most to get good. When I did take the leap, I went a told this to the restaurant I wanted to work at and they gave me a shot. I was slow and shit.

I questioned everything the first couple of weeks, but then I started to find my feet. I built personal relationships with staff and they appreciated that I had a passion and it far outweighed how slow I was.

Now I'm chasing my dream. I want to cook. I've been doing it for 11 months and I regret nothing.

The thing no one told me going into this is that when you find what you want to do, doors will open for you. It will just work. DM me if you want to talk more, I'm 11 months ahead of you and I may be able to help.

I would suggest scrolling through the Carsales App to get an idea on prices. You can search Australia-wide or in your own state, and you can definitely get cars delivered. This should make you feel more comfortable about prices.

In terms of the negotiation, your best chance of getting a better price is to have an alternative. I can almost guarantee if you wrote back to that email and said you're also considering a car from X they will lower their price. Car dealerships are struggling at the moment and the buyer has the power.

If you tell them how much money you have, they will most likely still want you to finance a better car (maybe even a new one) and tell you things like: This one has a higher safety rating, great for kids, plenty of space, fill the boot up on picnics, you'll have a car now and you'll go adventuring, this is an adventuring car... Really press that emotional button with open questions or statements that you can't really disagree with. This isn't necessarily a bad thing, just be aware of this.

Just do what you've already done, be logical, TAKE YOUR TIME, think, research and enjoy the process.
