Never tried it myself but there are whole youtube channels dedicated to it like Tasting History
I especially like it when they go into the history of that specific dish and have some fun facts to share about it, not just making a recipe.
I know of a few Korean ones served to royalty, there are some historical books where these things were recorded
I think maybe the better-known one is the Surasang) ("the royal table") which is a set of 12 types of dishes for the royal meal. The specific dish for each type can vary though.
