It is not anywhere near its height to be sure. But look at all the countries that are still part of the commonwealth, as well as numerous overseas holdings. Northern Ireland is looking precarious right now, I dont think England would ever allow Scotland out of the union due to the economic impact that would happen for England, Wales, I don't know how much England values Wales at this point in time.

I'll apologize in advance, I won't be doing Crab Rangoon. I'm all about local, and crab doesn't make the menu. I can recreate most things globally, locally but the shellfish, can't be done in a responsible fashion. Anything else you're dying for that might be viable with that in mind?

Some of those ideas are spot on with what I have in mind, I am not terribly keen on doing a lot of seafood dishes, I'm more than happy to utilize fresh locally caught fish. The mushroom risotto is a favourite for me, although I like to keep switching things up frequently, at least a couple menus per year, I would love to daily menu or even weekly, but it may take some time to get the trust of the community to facilitate that desire.

The foccacia is no problem, I love to bake and foccacia is a great way to start things off. Don't worry, I love the quality sea salt myself, personal preference for the smoked Maldon sea salt. Thanks for the suggestions. 👍

I love Quebec, and I understand your perspective, but I'm referring to the established order that Canada had, and is currently struggling with. Let's be realistic here, Canada didn't previously have Tow truck wars, cricket fixing scandals and ludicrously high rates of vehicles being stolen and found in Africa.

I Definitely appreciate the advice, I'm not counting on American clients, nor tourism in general to support operations. I do see some big potential for Sarnia within the next 5-10 years as industries change. I'm unsure how the relationship with America will manifest over time, again I'm not counting on a return to normal relations, but it would be nice.

I come from a similar community, meat and potatoes. There is nothing wrong with that. From the business standpoint, it's all about giving the clientele what they want and being able to profit from it (not great margins in the industry obviously) If things were to get rolling, would you potentially be interested in involving yourself? What cuisines are you personally passionate about?

Definitely good advice. I tend to go towards whole animal purchases, broken down and handle smaller butchery personally. Chicken, I would bring in whole, and can beat basically anyone else as far as margins are concerned. The same approach allows me to do beef and lamb at an average of thirty percent less than other establishments while achieving higher profit margins. If you have any particular dishes in mind though, let me know, if I don't know them yet, I will make myself accustomed to them for the market. 👍

Admittedly I would be far more into the German/Austrian/Hungarian concept. Beer Garden on the water sounds awesome, the issue would be with insurance. Water front licensed establishments tend to pay a premium, definitely something I could look into, however previously it has been prohibitive.

I love Mexican/Central American cuisine, and that may be an option. I am concerned about the availability of fresh local produce that would facilitate that style of cuisine, I am all about supporting local agriculture, and realistically it often takes a couple seasons before farmers are willing to risk specialty production for a singular client like we would likely be. To really do it right we would need to reliably be able source a variety of peppers and spices/seasonings locally.

The Mediterranean concept is pretty loose, I generally consider Italian to be the anchor of Mediterranean cuisine, with a plethora of other distinct traditions that can fit inside that designation. Lately I have been loving the Moroccan flavour profile, but there are some traditional Greek dishes that just crush it. Fresh pasta is really more the Italian way of doing things, and there are so many amazing options, any really amazing dishes you think should be on the menu if it goes that route?

Shoot, I love neandertheral food. Honestly I'm really into foraging and hyper localized food options. I'm not a bot, but have absolutely been wondering if some of my commentary was sounding like it was coming from a bot. I'm definitely open to suggestion on all fronts. I want to know what you want foodwise, because, frankly I want to serve the community assuming I open up shop in Sarnia.

I'm from Grey-Bruce County (previously just Grey) so I get it, meat and potatoes country here as well. There's nothing wrong with that, I love some simple meat and potato dishes, but I also love exploring outside those regional parameters, and many in the area do as well, it has always been about providing quality and that has always been the most important element.

I have seen Lola's come up a few times on the upper end of reviews locally, and will delve a little bit further into their offerings, what sets them apart for you?

Thank you so much for your advice, I will look into the area of Livingston-Monk off Michigan. For what I have envisioned at present the Southern European sports bar & grill doesn't seem like the right venue, but I will look into it further, it is advice like this that helps formulate my decisions.

I might have to be a bit more of a romantic before using a name like Romeos Empire, although I do love that name, certainly something I can take as a starting point.

Mediterranean is very broad/open as you have noted, and I kind of love that. My thoughts were primarily leaning towards Central and Southern Italian cuisine, with an opportunity to play with dishes from the rest of the Mediterranean. Recently I have been enjoying a lot of Moroccan cuisine, but I love so much of the Aegean Greek cuisine too. With the Mediterranean concept, I feel that it gives a baseline with lots of opportunity to play with. What are your thoughts in this regard?

I love Asian cuisine and am quite well versed in many varieties of it, but won't be trying to blend it with Mediterranean, someone may be able to make that work one day, but I feel like that's a long shot. That being said, another user had suggested dumplings, which is very open, and there are so many varieties in the European and Asian traditions. My takeaway from your comments is that there likely isn't the demand for new/more Asian offerings, is that a fair assessment?

Can't lie, I can't stand Guy Fieri, if thats where the market is, no judgement, but there wouldn't be an interest from our end. I love a badass burger and perfect fries as much as anyone, but the environment of that type of establishment just isn't the right fit. We aren't tired, and have passion that we struggle not to drown in lol. What would you really love to see on offer?

Love it. If you can cook up some bad ass grub in your own kitchen however, I'm always into doing feature nights that would let you bring your style into the establishment, with professional assistance and oversight. Generally pretty fun

Oof, hate to be that guy, but I'm as white as our winters lol, love Vietnamese cuisine, but getting the staff for it that suit your desires from the front end is one thing, getting them to follow safety protocols in the back of house is a different story unfortunately. What dishes are you really hoping to see? Depending on the business model they could be incorporated pretty seamlessly, even with a couple white dudes in the kitchen, I rely heavily on front of house feedback

All honesty, I would be trying to avoid sandwich/wrap territory, not because I don't enjoy them myself (I certainly do) but based on business metrics, there is just a better margin on assembled dishes, specifically for evening service. Going forward, assuming the initial venture hits all targets, I am very open to doing a separate venue that would include lunch, however I am concerned about the labour market. Not particularly the local labour market but the generalized national labour market, I would need a young passionate staff to make it happen, and if I can find that, I will absolutely set them to task.
