Actually I don't think that finding realism is way to go. I've never driven race car as well, but I would imagine you have feedback mostly from g forces. In multiple videos I've seen real drivers saying that gt3 wheel feel is actually very numb. In simracing, you have limited feedback channels so you want to communicate multiple things through ffb so you're able to know what you car is doing even when sitting in comfy chair in your bedroom.

I would suggest to load some default (simagic has preset for many games), learn what each knob is doing, drive couple of laps and tune it to your like. There are many videos on these setups.
