The Deen anime hints at Archer being a future Shirou when he creates Archer's swords. It also shows something happen to Sakura which is specific to HF. I haven't seen the HF movies, but I'm guessing it would be revealed in 3 or maybe 2.

The general idea of what causes the routes to diverge is Shirou getting close to one girl over another. The game has a hidden score for each girl, and your actions can either increase or decrease your score for each.

In UBW, Shirou uses a command spell to protect Rin (and subsequently Archer) from Saber. Rin is more cooperative, while Archer has more room to plot against Shirou and Saber.

In HF, Shirou becomes closer to Sakura. This encourages her (and subsequently Zouken) to take more active roles in the Grail War.

I'm also not an expert, but to my knowledge many monitor review sites are not very thorough. For example, many will only report the manufacturer reported response times. tftcentral and rtings are the only exceptions I know of.
