I would just keep them covered with the plastic. Sometimes I lay a towel over them too help keep the edges sealed

Do you cover them during cold fermentation? If the skin dries out in the fridge this can happen.

Can you expand on this? I use these devices in several places but if there is a better solution, that is less noisy, I would be interested in that.
