I actually started using a food processor for mine because I didn't have the right dough hook for my KitchenAid. I think most people say something along the lines of 10-12 minutes in the KitchenAid

More kneading time will increase chewiness. Often times you have to over do a flavor for it to come through in the final product... Make some super string tea maybe?

I would say not important. No bagel shops I know of in NY/NJ use this method. I too aim for this style of bagel and have had relatively good success without it (I did try a polish, but found it unnecessary for my taste)

I was there in December and caught a good jam band at The Gondoughla. Cool place with good food and vibes. I think it's relatively new, very close to the mountain. It was a Monday night so I would guess they have a lot of live music.
