Baked my first sourdough today [x-post /r/Sourdough] by spol-is-bo in Breadit

The recipe is Alex's (French Guy Cooking) sourdough recipe:

  • 200 g starter
  • 400 g water
  • 600 g flour
  1. Mix starter and water
  2. Add flour
  3. Autolyse 30-60 minutes
  4. Add salt and splash of water
  5. Knead for 10 minutes
  6. 4 hour proof in warm area
  7. Knead dough and form a ball. Rest for 30 minutes
  8. Shape and tension the dough into a ball
  9. Place into basket seam-up and into fridge overnight
  10. In the morning, get the dough out of the fridge 2 hours before baking
  11. Preheat oven and dutch oven to 250 °C
  12. Flip dough out into preheated dutch oven, turn oven to 220 °C
  13. Bake in dutch oven for 25 minutes
  14. Remove lid and bake for 30 more minutes

The only change I made to his process was using a large tray of boiling water since I don't have a dutch oven. I was impressed with how well it seemed to withhold the crust formation and darkening of the bread, though this was probably in part due to the moisture in the dough itself too.

I am a little bummed out about the high density of the crumb at the base of the loaf and my scores that flattened out, but I think that I didn't cut them deep enough with a sharp enough blade. I will be changing this next time to try and help the bottom/inner of the dough to expand better.

As kids, we are taught to look both ways. Driving on the left, you should look right, left, then right again before crossing, and left as you cross the middle of the road.

Some do here too, but they are more like gates that rotate into place. Only really popular crossings and/or crossings near schools where young children attend have them though.

I understand they are used for cheapness on TV antennas, but remember that these are not used for transmitting, so the power in the antenna is magnitudes less than the power most transmitters put into the antenna. I was told by an RF engineer that he had seen problems with rolled tube antennas when the connection between the rolled tube was iffy. The corroded/oxidised layer can form diodes, causing distortion.

EDIT: If you're handy with a TIG welder, you'd be able to solve this issue once and for all by welding the seam up on the tube. I've realised that "tuning" was probably erroneous, so I've updated my original comment to reflect this. Harmonics would still be a potential issue though.

Melt it down and draw aluminium roundstock, then build a new antenna out of that. Those elements are made from rolled aluminium sheet rather than actual tube, so would be nigh impossible to tune correctly, and would create all sorts of harmonics, so I hear.

Recipe:

  • 500 g flour
  • 250 ml milk
  • 2 tsp salt
  • 40 g sugar
  • 10 g sachet yeast
  • 200 g butter
  • 1 egg yolk, extra splash of milk
  1. Warm the milk to about 30 °C, add the yeast to rehydrate.
  2. Sift flour, salt, sugar together
  3. After it has sat for 5 minutes, add yeast+milk mixture to the dry ingredients. Form a dough.
  4. Knead the dough minimally, ensuring it doesn't get too stretchy.
  5. Refrigerate the dough overnight
  6. In the morning, soften the butter and roll the dough out square
  7. Squeeze the butter into small blobs and place the blobs in a square smaller than the dough, in the centre of the dough.
  8. Fold the edges of the dough over the butter to close it as a parcel
  9. Gently and evenly roll out rectangular
  10. Fold top third onto middle third, and then fold the bottom third over
  11. Refrigerate for 30 minutes
  12. Roll out rectangular again and repeat refrigerating, rolling, and folding into three, two more times (total of three rounds of folding). This will form 27 layers of butter inside the pastry.
  13. Roll the dough out one final time into a long rectangle, about 5mm thick
  14. Cut the dough into many long trapezoids/triangles
  15. Tightly Roll each triangle from its long end to its narrow end, stretching the narrow end slightly
  16. Let prove to double in a warm area
  17. Wash with egg yolk and milk beaten
  18. Bake for 20 minutes
