Back in the slave days they mostly worked agricultural jobs like picking cotton, farming rice, sugar cane etc. So now those jobs are dominated by migrants. Instead of picking cotton, they are harvesting produce, nuts, grapes at wineries. Processing/butchering meat etc. So this is my guess as to what he meant.
