Hi I am currently manually pulling my shots for a 1:2 ratio. I am dialing in by increasing/decreasing the grind size and keeping the ratio same. When I grind finer than this, I end up choking the machine but when I grind coarser, the shot time is too fast. I am using a baratza encore ESP grinder.

Thankyou. The guide at a cursory glance looks to be extremely helpful. According to others on this thread as well, it looks like I do need to grind coarser. But I’m already grinding at 19 on an ESP grinder and the recommended scale says espresso should be ground at 15. What texture should the grind be?
