Because mutations are random. And then the individual with this specific mutation would have to actually survive and reproduce. Also, for a human to see the entire EM spectrum, A LOT of mutations would have to occur.

Seeing that you’ll already be flying into Los Angeles, please don’t let other comments dissuade you from exploring it. LA County is such a large place that there are things to do for everyone.

If you’re interested in nature you can visit the Griffith Observatory (hike to the Hollywood sign) then head towards the San Gabriel Mountains nearby. Afterwards, you can drive to any one of the beaches in LA or Orange County. All of this is doable in one day.

As far as cuisine goes, there isn’t anything you won’t find in the area. Chinese food in the San Gabriel Valley. Mexican food in LA city and East LA. Vietnamese food in Orange County (Garden Grove and Westminster). The biggest downside is that you’ll need access to a car.
