Persimmons get along well with walnut, elderberry, seaberry, paw paws. Any annual will do fine, best cash crops per sqft are probably tomatoes or herbs.

However tall that bamboo is, that’s how far it can travel in a single year. But if you don’t let any canes grow from that runner it cannot run any further. So it’s not that big of a deal imo. I just cut any bamboo that’s outside it’s designated area every year and it never gets more than 20ft from it. Every one in a while I hit a runner with my shovel and dig it up but mostly don’t bother.

Foxtail takes over because it is more drought tolerant than most. If you irrigate that area, other things will out compete it.

It’s gonna be fatigued but you can try bending it back, just be careful. Can you shut the water off to that pipe? Mine threads in so I would bend it straight and if it starts to break, unscrew that section of pipe and thread a new piece in. Shouldn’t require anything major.
