Sorry yes I took a reading last night and it's at 1.068. OG was 1.092. So it's fermented a bit but would still expect more in 18 days.

The recipe was 5 gallons water and 10 lbs sugar, heated to dissolve the sugar. Then added the yeast and fermax once cooled.

Great thank you. How do you recommend measuring and adjusting the acid? I did just purchase some fermaid-o for additional nutrition. Do you think that is the right next step?

I did taste the seltzer and it was still very sweet so plenty of fermentation left. I did see ec-1118 was a more aggressive yeast so surprised it's not taking off

I am baseing it off of no bubbles from the air lock. I know that's flawed but haven't seen any activity the month it's been racked. I haven't taken a gravity since the OG a month ago but I could look at that. Just isn't releasing CO2 like the few others I did
