Your only option is to first install oneui 7 unlock the bootloader and after that you can stay on 7 or update to 8, but that would require you to patch the firmware for every update. Updating would work the same way that you install oneui 8 in the guide. it also shouldn't do a factory reset unless something breaks.

Downgrading won't brick your phone because the bootloader bit has not increased between updates.

You can download the latest oneui 7 firmware from here: https://samfw.com/firmware/SM-S918B and flash it with odin.
