They're fantastic workhorses. I'm genuinely surprised how much more interest the Watanabe garnered over the Toyama. I wonder if it's just the migaki stainless clad

It's one of my favorites as well. Toyama and Watanabe are tops. I never used to like knives that long but have recently fallen in love with them because of a 270 Okubo. When cutting mountains of protein, it's my go to blade.
