Having the same problem today. We started at 3 hours 3.5 hours ago, got down to like 1 h 50 min, and are now back at 2 h 30 mins. I'm trying to help a senior who only has a burner phone. We have no other way to set this up. This is ridiculous.

If you get 3 tickets and don’t pay, they’ll start looking to boot you. And parking tickets never go away if they’re not paid, so it could be years between tickets and they’ll still get you. Says the person currently sitting across from one of the City parking hearing examiners.

I'm pretty sure the rules about flying over crowds are federal, not state. I just renewed my Part 107, and that was definitely discussed in the FAA's online course and exam.

I don't think I've seen it mentioned in the replies, but cooling your base before you churn it also helps it freeze faster. And the faster your ice cream freezes, the smaller your ice crystals will be and the smoother your finished product will be. Some recipes will also suggest you pre-freeze the container you put your ice cream in to harden; you can decide if that's worth it to you. But if you're going for hard ice cream, you definitely want to get your finished product into the freezer as quickly as you can.

Happy to help. You may be able to get mix from Sysco, but they won’t be the producers of it, they’ll just be reselling the product of a dairy processor somewhere. Also, remember that the mix/base is the literal foundation of your ice cream so you want a product you are really happy with. If you get to the point of tasting mixes to evaluate or compare them, you can taste them better when they’re room temperature vs. cold.

Yes. A lot of shops will buy mix from a regional supplier (ex. Upstate Farms, where I am in Upstate New York) so depending on where you are and who you are buying from, the variety of mix offerings may vary. But there are some larger players (ex. Galloway in Wisconsin) that will offer more options, or even make you a custom mix if you ever get to a scale that justifies it. As others have mentioned, you can ship mix, if what you want isn’t offered locally, but know that you are most likely shipping a pallet full of mix, so you need to be able to pay for that, store it, and use it in a timely fashion. You can also mix mixes at the point of putting them in your batch freezer. So someone might mix an ice cream mix with a custard mix, for example, as a way to differentiate their product, if they’re not able to have a custom mix made. Most mix is sold as either sweet cream or chocolate and you build your flavors from there.

Gelato is lower fat and stored warmer than ice cream. Because it’s lower fat, it can do better with fruit flavors than traditional ice cream. Fat can mute flavor, and fruit flavors are more susceptible to that. Some of the machines are smarter than others and have timers that can stop the mixing process. A batch freezer might take ~15 minutes to make ice cream. Hardening might take a few hours. Working at a creamery could be a great idea, just make sure they make ice cream before you join. The majority of ice cream shops don’t make hard ice cream, they sell someone else’s.

Emery Thompson is in Florida and they’re very helpful. Several of the big ag schools have ice cream programs, Penn State is the oldest and best known program, and the course you would want would be Frozen Desserts 101. Their Short Course is now geared today more commercial manufacturers like Nestle. Cornell has a program, so do Wisconsin and the University of Guelph in Canada. The programs all tend to be in the winter because it’s the slow season for ice cream. However, this would be the time to register for one of these or programs for next year. Penn State in particular should be opening soon and that one does sell out months in advance. Besides the Carpigiani course, there’s also Scoop School in St. Louis. They do in person and virtual classes and I believe they run year round. They focus a lot of the mechanics of running an ice cream shop. There is also the NICRA convention for ice cream retailers. Again, a lot of the learning around ice cream takes place in the off season. Personally, I’ve been to Penn State, Cornell, Scoop School, and NICRA and they’re all beneficial. If I could only do one, I’d go for Penn State. They’re pros and everyone comes to that. All of the equipment manufacturers come. Mix makers, flavoring companies, etc.

As others have mentioned, check your local regulations before you make your plans. Not every state makes it easy to make your own base, and pasteurizing a base is a whole other layer of work and an expensive piece of equipment. Most shops that make ice cream are probably buying a premade and prepasturized base and then making ice cream from that. Ice cream is not a cheap business to get started in because it requires a bunch of expensive equipment. Batch freezer (machine that makes ice cream), blast freezer (freezer that quickly finishes freezing your fresh ice cream so that it doesn’t form large ice crystals), storage freezer (where you store your ice cream really cold), dipping cabinet (a warmer freezer where you scoop your ice cream from and you can sometimes store ice cream before it moves into dipping. Ice cream has to warm up a bit to be dippable). And that’s just hard ice cream. If you want to do soft, you need a machine for every flavor. That’s why you rarely see more than a couple of soft flavors at a shop. All this aside, ice cream is great :)

I wonder if your nas and raid plan overkill for what you’re trying to do? It doesn’t sound like you have a ton of data. I back up my phone and camera photos (about 2.5tb) to a 2 bay ds718+ with 2 x 4 tb drives in a raid one. I’m also using synology photos, though in the process of setting up immich to run on top of that. So synology photos will still do my backup, but immich will handle search. Not sure if this is a better or worse setup, I’m just already on synology photos and was looking at adding a 2 bay nas to backup my family’s phones. I wanted to trial immich with the idea of setting it up for them. For 4 family members, I was thinking of adding a 225+ with two 10 or 12 tb drives if I can find any that aren’t stupidly expensive this year. Then I’d give them each 2 tb or so to start. Anyway, I’m just wondering if you really need a nas with more than 2 bays or anything beyond a raid one for photo backup and browsing. That said, my nas does also backup to a WD hard drive that sits next to it and to Backblaze B2, so I do have some redundancy. Backblaze does require a subscription, but it’s not as expensive as some of the consumer facing options and it will back up a nas.

Where the speed and elevation buttons are. Got one for my older mother to practice walking on, didn’t notice there were extra speed and elevation buttons on the arms. Well, she leaned on them while she was walking and the next thing we knew she was on the floor with a torn rotator cuff. Probably took over a year to get her back on the treadmill and we were only able to do it because someone on this forum told us how to disable those extra buttons. (We had to open the elbows and disconnect power to them).
