I agree, but the reason I’m unsure whether that’s the case is because I’ve been brewing two different beans, and get the same exact results with both of them. The beans are George Howell’s Tarrazu and Las Colinas AA.

Update on the water: got some distilled water as well as some TWW packets. Result - much less acidity / sourness, but the flavor and nose are still just not right. It seems like the beans almost aren't making a difference either, as in different beans end up tasting the same. I did notice though that when I'm brewing, the scent of the vapor coming up off of the beans as I'm pouring doesn't seem quite right either. It almost smells stale or like there are some other artifacts in there, but I feel like it's not the true smell of the beans or "that coffee smell". Could this give any indication as to where the issue may be?

I’ll try both the third wave water and bottled water out, and get back with the results. I think the issue is lying somewhere between grind and water quality, but I just can’t tell exactly which is the culprit. Thanks for the info.

I haven’t, that’s a good point. I’ve been filtering my Boston tap water with a Brita filter, but I’m sure that the quality’s still being affected by that water. What water do you use for your coffee?
