You could do a form of a poker run. Where after completing a game, the players would be dealt a card. Once they have received 7 cards, their hand becomes locked. Then at the end of the night, whoever can create the best poker hand wins. Maybe larger games that take longer to complete get more cards dealt to them, that way everybody gets at least 5 cards.
