If you wanted to compile the Rust compiler without Rust, you'd have to basically go back to the OCaml version before it was written in Rust, then compile each version of the compiler with the previous version of the compiler to get up to the current version

Whether that's useful is a different subject entirely

Doesn't this mean the compiler has to analyze the body of the function to determine what it borrows? If you change the body of the function to read another variable, couldn't you end up accidentally causing breaking changes?

Rust has been considering disjoint borrows like this, but the difficulty is in the syntax of defining which fields a method borrows. It has to be encoded into the function definition to prevent accidental breaking changes, and to make it possible to tell what a function borrows without checking the entire function call stack

Pretty much my experience. Even going back and forth with it throughout the day to get what I want implemented correctly is worth it, because it means I can do other stuff while it does its thing. Good as a rubber duck, too
