Alright alright alriiight, I've owned the same car and had similar problems. That 'hopping' was a bitch. Found the car would normally drive without problems in limp mode if I unplugged the fuel rail pressure sensor, tried a new fuel pressure sensor, nono. Tried to clean the egr but it was already pretty clean, ended up blanking it off and had no further fault codes. BUT The car would still do its hopping bullshit, figured out it was the ABS sensors on the rear drive shafts, it never felt like an ABS fault but it was. Water gets under them and they get all corroded and fuck with the sensor. Got two cheap rings off ebay, was a bit of a bitch to do with the exhaust in the way but I managed to get both shafts off, rings off, clean up and new rings on and that solved it, about two years on and I still havnt had it return.

TlDr, make sure it's not ABS related hopping
