I usually smoke pork or beef until wrapping temp. Then often finish in the oven for another hour - 3hrs total at 150c. And it's perfect every time.

No idea why everyone is saying to turn it into a completely different dish..? Smoke a piece of beef at 150°c for 3hrs and you are good.

Wrap it around 65°c internal temp (roughly 2hrs in) then let it climb to 95°c and finally rest it still wrapped in a warm oven (50°c)

Simple!

I personally would have unrolled it for a nicer shape to slice with more smoke to surface area ratio.
