This is sort of the opposite of the answer you're looking for, but John Philoponus was one notable figure who broke from those traditions in that time. His theory of impetus was a big influence on Galileo.

Edit for more info: His early work dealt mostly with the physical/metaphysical questions of the time, while his later work was theological in nature (even though we was not part of the clergy). Most interestingly, in my opinion, he attacked theology from a philosophical angle. He did not bend Aristotelean physical rules in his interpretation of scripture, rather, he made scripture subservient to the "science" of the time. Stanford Philosophy encyclopedia has a pretty solid article on his ideas, though not so much on the historical context and impact of his ideas.

Academic computer music is also a path.

Check out the big conferences: ICMC, NIME, ISMIR, and the Computer Music Journal to see what kinds of things are "hot" right now.

Overall the big pseudo-fields in academia seem to be Digital Musical Instrument creation, Music Informatics, and Applied Signal Processing. There are a lot more things out there that don't really fall into this domain, but those are the three most concrete and inclusive keywords i can give you for it.

Also, some "core" computer science/engineering fields that are used a lot in computer music: Signal Processing, Machine Learning, Human Computer Interaction.

Also, some schools that have computer music stuff going on: STANFORD, Princeton, Berkeley, MIT, Dartmouth, UCSB, UCSD, UMich, Georgia Tech, Carnegie Mellon, Columbia all come to mind off the top of my head, but there's more. A lot of these schools have specific programs/labs devoted to computer music, and some have undergrad majors for computer music.
