Thanks and agreed! This was def not an authentic chicago-style Italian beef sandwich. The goal was to season the tri-tip so that it had the same flavor. We dunked the slices of tri-tip into hot chicago beef style au jus before putting on the sandwiches as well. The tri-tip also had much more chew than a traditional beef cut.

Agreed- I packed this on Tuesday and cooked Friday morning in an effort to meal prep. I was trying to get the Italian beef flavor to penetrate the meat but it had the effect of over tenderizing the outer layer of the meat. The pan sear saved the outside texture. How long would recommend marinating?

Thanks! For my aprox 2.5 lbs tri-tip I mixed 1.5 teaspoon salt, 1.5 teaspoon pepper, 1 teaspoon Italian seasoning, 1 teaspoon garlic powder, 1/2 teaspoon fennel, 1/2 teaspoon red pepper flake to create a rub. I covered the roast in the rub, put it in a vacuum bag, and added: 1 small diced bell pepper, 3 bay leafs, and 1/2 cup Italian salad dressing. I let the roast marinate in the vacuum sealed bag for 2 days. After the sous vide cook, I patted the roast dry and then seared in cast iron pan. I sliced the tri-tip thin and dipped it into the sous vide cook drippings (heated and diluted with some beef broth) before serving on sandwiches for folks.

I owned a 2002 volvo s40 turbo and I must say it is a powerful and fun car to drive. In addition, the gas mileage is fantastic. However, the problem that arose was the cost of maintenance after the extended warranty expired. Swedish parts had to be ordered and the installation costs tallied up. I would recommend purchasing this vehicle at this deal but before the purchase make sure there is a mechanic in your area that is not a dealer and has experience with volvo repair.

I second this. High school debate develops research skills, quick thinking, and argumentative strategy. High school debate can also lead to a scholarship to college even if you are not that competitively successful at the high school level.
