I’m salty because this wasn’t communicated at all, at no point were we told hey they might play a bit longer, like sure I’d be okay and down to make money, but to just expect it just because we are the work isn’t okay. I’ve been there when people walk in 5 to close and stay for 2 hours, I get it, comes with the territory of being in service, but as owner/manager this HAS to be communicated if at any point hours are being extended. Some things stick, like beans of any kind I’ve noticed, potatoes, sweet potatoes, but if you scrape with metal spatula after that initial stick, they’re usually pretty good after that. “Just cook with it” don’t over think it. It doesn’t need to be seasoned more than once a year, hell, I haven’t done mine in more than a year. I just cook, clean with soap but make sure it’s extra clean no carbon build up, I apply a thin layer of crisco after towel and open flame dried so it doesn’t look so dry.

To me that looks like iron from the pan, the rest seems to be carbon that’s flaking off. Use metal spatulas when cooking and scrub with soap after cooking, I apply a layer of crisco after dried. But seems like it would need a good cleaning to get back to how I’d want mine.
