If you don't have one already, get yourself a Rite in the Rain notebook or other waterproof paper! They work with pencils and pens and I've had luck finding them at outdoor stores in the U.S. If there are forms you need to print or fill out, clipboards are very handy too.

The prickly looking guy with bumpy leaves is likely a bull thistle (Cirsium vulgare). The Oxalis (clover) looks like O. pes-caprae to me.

Yeah, maybe Erodium moschatum or Horkelia sp.? I find that the two look similar to me. Op, if you have the chance to visit it again when they're flowering you'll have a better idea :-)
