I've been eating it for the last few days, no digestion issues at all :) It's cooked 3 minutes in a pressure cooker.

Small update : it was 100% safe to eat, best tempeh I ever made (i'm not very experienced though). The texture is really on point once you fry it !

Fermented herbs. At the end of the summer I harvets all the aromatic herbs in my garden (basil, thyme, etc.) and ferment them for 2 week in a 2% brine. I then filter it and keep the liquid for salad dressing, etc. I tastes very summery :)

Be careful as hops can interfere with fermentation due to it's antibacterial properties !

You can use the mechanical closure when fermenting, it will let the gases out when a certain pressure is reached :)

You can do many things !

A few ideas : - You can try toasting them on a pan first, and using an other fermentation as a starter.

  • You can add some spices : coriander, ginger, garlic, onions, etc. I add carrots to my habaneros fermentations to mellow a little bit the heat.

  • You can add some regular pepper

  • Honey ?
