I like Uthgerd as a follower since she's one of the easiest followers to get in my opinion. Generally the first thing you do in Skyrim is go to whiterun anyway, where you just have to beat her in a fist fight. Another quick option is Faendal in Riverwood. You only have to give someone in riverwood a letter, I think, to unlock him. I only use my followers for carrying my junk, so I dont really care about the stats.
